Three - Pepper Almonds
INGREDIENTS:
2 cups whole California almonds, blanched or natural
1 ½ teaspoons kosher salt
½ teaspoon white pepper
½ teaspoon freshly ground black pepper
¾ teaspoon red pepper or chipotle flakes
1/3 cup firmly packed brown sugar
2 teaspoons vegetable oil
Makes 2 Cups
DIRECTIONS:
- Line a baking sheet with parchment paper.
- Heat a large, heavy-bottom skillet over medium heat, add oil
- Add almonds and cook, stirring just until they begin to color, about 5 minutes.
- Add brown sugar, 1 Tblsp at a time, waiting until each Tblsp melts before adding the next. Cook until all but 1 Tblsp has been added. Sprinkle in pepper flakes, black pepper and white pepper, stirring continuously.
- Add in remaining brown sugar and salt. Cool before serving.
